This lemon-balsamic dressing has the perfect balance of acidity from lemon juice and balsamic vinegar and sweetness from honey. Use it to dress a simple salad with anything from mild to spicy greens.

Ingredients

  • 6 tablespoons extra-virgin olive oil

  • 2 tablespoons finely chopped shallot

  • 2 tablespoons lemon juice

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon honey

  • 2 teaspoons Dijon mustard

  • ½ teaspoon salt

  • ¼ teaspoon ground pepper

Directions

  1. Combine oil, shallot, lemon juice, vinegar, honey, mustard, salt and pepper in a jar with a tight-fitting lid. Cover and shake until well blended.
